Time to share another recipe with you all. This time, we are featuring...Cheeseburger Pie! I clipped this recipe out of a newspaper a few years ago, and I make it regularly. One of our favourites, and usually falls into the "30-minute meal" category.
What you will need:
1 lb lean ground beef
1 medium onion, finely chopped
2 cloves garlic, minced
¾ cup (175ml) tomato juice
2 tbsp barbecue sauce or chili sauce
1 cup shredded cheddar cheese, divided
salt and pepper, to taste
1 cup all-purpose flour
2 tsp baking powder
¼ tsp salt
3 tbsp (45 ml) butter or margarine, softened
1/3 to ½ cup milk
(The yellow pail is my flour pail - I love it!)
First, brown the ground beef, with the onion and garlic. I rarely stock real garlic, so garlic powder is my substitute.
Once the meat is browned, drain fat. Add barbeque sauce, tomato juice, salt and pepper. I often add a squirt of steak sauce too. (For the tomato juice I use a 156mL can of V8 vegetable cocktail. This is less than the called for amount but it is not too dry.)
Mix well, and allow to simmer for 5 minutes so the flavours can blend.
Meanwhile, prepare the biscuit topping. Add flour, salt, baking powder and butter to a small bowl.
Using a pastry blender or two knives, cut the butter into the flour mixture until it forms coarse crumbs. (I never find mine looks terribly coarse, but it has always turned out.)
Add milk and stir, until entire mixture is moistened and holds together. Set aside briefly.
The meat mixture needs our attention again. Add the big pile of cheese. Stir it in until it melts. Don't worry if you can't see it anymore. You know it is there!
Pour the meat mixture into a pie plate.
Drop the biscuit mixtures by the spoonful on top of the meat mixture. (That's what the original recipe said. I find the mixture far to sticky for a spoon to be of any use, so I just use my fingers.)
Top with remaining grated cheese.
Pop into a pre-heated 400 F oven for 12-14 minutes, until biscuits are golden.
Serve with a salad and a side vegetable. That's what I always do....
Did you believe that last statement? ;) It really isn't true! I think today was the first time I had canned beans AND a salad. All for the blog, of course! More often than not, there is neither beans nor salad, although I have been stocking up on Del Monte canned beans when they go on sale as they are our favourite. Favourite though they may be, as you can probably tell from the 5 beans on my plate, I'm not still overly fond of beans. But I make myself eat a tiny helping! Rob likes beans though, even canned beans now that he's tried DelMonte!
