What you need:
- Bread - I prefer a breadstick, especially if I find it on the day-old 50% off rack
- mayo
- parsley
- paprika
- garlic powder
- green onion
- tomatoes
- cheese
1) Toast the bread pieces - on both sides. I tried it once, only toasting one side, and it was just not the same. If time permits, allow the toast to cool.
2) Prepare the dressing. Dice the green onion very finely, and add in a couple spoonfuls of mayo. (I usually use 2 soup spoons, quite heaping. I've never run out of dressing. :) ) Season with parsley, garlic powder and paprika, to taste, and until it looks pretty.
3) Spread the dressing on the toast - be generous, you probably have too much dressing anyways!
4) Dice the tomatoes and divide evenly between each piece.
5) Grate some cheese and top each bruschetta piece.
6) Broil for a few minutes, until the cheese is melted, and the mayo mixture is bubbling on the edges.
7) Serve and enjoy!!

Delicious! I love bruschetta! Takes a bit longer when you stop to take photos every few minutes, doesn't it?
